Spanish Hunter Chicken – braised organic chicken with smoked sweet paprika atop a saffron and manchego polenta with chorizo and rocket salad
Fish of the Day – served with tomato tart tatin balsamic and garlic braised tomato in a pastry shell sprinkled with buffalo fetta, micro herb salad and finished with a drizzle of Capelli olive tapenade and basil syrup
Kilkivan Organic Duck – confit duck legs on a potato pancake with purple cabbage and beetroot slaw. Served with imported white figs macerated in pedro ximenez and a drizzle of 69% Bolivian chocolate infused jus
